Some days the lady in front of me at the coffee shop orders a soy latte, the vegan lady I follow on twitter talks about her meal of soy pretending to be so many other foods she claims not to like, or “the healthy person” at work is letting everyone know she only uses soy milk on her cereal because it’s sooooooo much better for you and I just want to scream. Soy milk, soy cheese, soy hotdogs, edamame… It’s everywhere and it’s even used in industrial settings for ink, pesticides and diesel fuel to name a few.
I’ll tell you what that sounds like, it sounds like we have a lot of soybeans available and they’re cheap. I’ll let you in on a little secret, both of those things are true. Soybeans started out as a cover crop in the United States as a cover crop for corn. Soybean plants help put nitrogen back in the soil and so are rotated with corn plants. As we all know, the United States also uses a lot of corn. Now, all we need is a plan for soybeans. Enter the health food industry. Since soybeans were already being used for animal feed (vegetarian), let’s use them to feed people who don’t like meat, let’s say it’s “Heart Healthy” too. Now, I know that soybeans have been in used as food, usually fermented, for a long time, but widespread use of soy in the United States is a relatively new phenomenon and within the last few decades.
It’s always good have more knowledge, I let my friends and family know what they might not about soy or just that they should do some research about it, if they eat or drink a lot of it. I think we should all do a little research every now and then about what we’re eating and if we’re replacing a lot of the variety of food we eat with pretend food made of soy, we should be fully aware of the consequences of that. Americans like to do things bigger and better than everyone else, and if soy is “healthy”, “MOAR SOYZ,” we say, get some at Walmart!!!11!!1! I mostly say “no” to soy but subscribe to moderation.
